We love exploring chocolate. A few years ago our curiosity drove us to purchase some "hobby sized" chocolate bean-to-bar equipment. We wanted to learn more about flavor creation; origins, varieties, terroir, roasting, conching, and so on. We infused, we roasted, we tasted, but ultimately we learned how much respect we have for the artists behind the bars. Making chocolate is not easy, but it is beautiful.
What follows is a selection of our favorite bars from our favorite chocolate bar makers across the globe. You will find a little bit of everything, from the classic to dairy free to daring flavors that actually taste great.
