Fossa Chocolate is one of our favorite chocolates makers.  Every time we look at their bars our mouth begins to water and our mind is amazed by their bold flavor choices.  Each of these chocolate bars are handcrafted in their Singapore workshop.  One reason we love them is they some of the best tea / chocolate bars in the business.  They also do not lack on creative Asian flavors.  See for yourself.  

 

SALTED EGG CEREAL

Tasting notes: Singaporeans' favourite tze-char dish in a chocolate bar

International Chocolate Awards 2017 and 2018 Bronze Award winner, 2019 Silver Award winner.

Homemade salted egg cereal blended with a special white chocolate that has been slowly caramelized to attain a blond colour and biscuit aroma. Very addictive!

Ingredients: Cocoa butter, milk powder, sugar, salted egg yolk, cereal, butter, curry leaves, chilli padi, sea salt.

Nut free.  Produced in a facility which processes nuts.

 

DUCK SHIT DANCONG TEA

Tasting notes: Floral fragrance layered with notes of longan and malt

International Chocolate Awards 2019 Silver Award winner.

A collaboration chocolate with rare tea curator - Pekoe & Imp.

Ya Shi Xiang (literally translated to Duck Shit) is a dancong tea cultivated in the Phoenix Mountain of Guangdong Province. The story goes that the farmer, in an attempt to hide the secret to his delicious tea, gave it an unpleasant name and it stuck. Fortunately, the flavour is nothing like its name. This 2020 Spring lot has notes of longan and malt with a long floral finish.

HONEY ORCHID DANCONG OOLONG

Tasting notes: Floral fragrance layered with notes of guava and cream

International Chocolate Awards 2019 Silver Award winner.

A collaboration chocolate with rare tea curator - Pekoe & Imp.

Honey Orchid (蜜兰香, Mi Lan Xiang) is a dancong (单枞) tea cultivated in the Phoenix Mountain (凤凰山, Feng Huang Shan) of Guangdong Province. This lot was hand-harvested from the Tian Zhu Keng village (甜竹坑村) in Spring 2020.

This oolong has a distinct guava aroma. Complemented by the biscuity Kokoa Kamili cacao from Tanzania, it is a delicious bar to be slowly savoured.

TRADITIONAL LIU BAO HEI CHA

Tasting notes: Moist wood, hazelnut, jasmine

Liu Bao (六堡 - Six Forts) is a fermented tea traditionally from Wuzhou, Guangxi Province. This lot made in Spring 2011 from a blend of Yunnan leaves and local Wuzhou Guiqing middle-sized leaf cultivar was fermented, steamed and pressed into their iconic large bamboo baskets to be air-dried for several months and then aged till today.

Enjoy the aged tea’s iconic woody and nutty flavours along with jasmine finish brought by Ecuadorian Costa Esmeraldas cacao used in this dark chocolate.

SPICY MALA

Tasting notes: Numbing spicy fragrant stir fry in a bar.

An incredibly aromatic, spicy and numbing, yet addictive chocolate, inspired by the popular spicy mala stir fry pot dish.

A special homemade spice mix is slowly wok-fried to release its aroma, then blended with the incredibly umami Yuasa soy sauce and chocolate made from oak barrel-fermented Malaysian cacao. A party in the mouth!

Ingredients: Cacao, cane sugar, cocoa butter, peanut, sesame, soy sauce, dried chili, Sichuan peppercorn, cardamom, bay leaves, cinnamon, star anise, fennel seeds

DRRIFTING SNOWFLAKE JASMINE GREEN TEA

Tasting notes: Jasmine fragrance with lingering umami

碧潭飘雪 (Bi Tan Piao Xue) is a traditional tea from Emei Mountain in the Sichuan Province. Made using top grade green tea harvested in Spring, layered with the best Jasmine flowers that bloom in Summer, it is an elegant tea that befits the name.

Prepared with the floral and mildly fruity Peruvian cacao from Ucayali River makes a chocolate that has a depth of flavour with lingering umami and jasmine fragrance.

Tasting notesSweet and umami tomato with warm gingery maqaw pepper.

A morish chocolate made with fruity and creamy Tanzania 54% Dark Milk Chocolate, perfect for sharing with family and friends.

Vine-ripened cherry tomatoes are harvested at its peak, then dehydrated to concentrate the umami and sweetness. A coating of crushed Taiwanese heirloom maqaw pepper lends a distinct aroma of lemongrass and ginger, providing warmth to the body and soul.
